Rice pudding || riisipuuro
INGREDIENTS
2 dl water
2 dl sushi rice
10 dl whole milk
1 teaspoon salt
2 Tablespoons butter
[1 blanched almond or several slivers for decoration]
DIRECTIONS
Boil water in a large pot with a lid.
Add the dry rice and cook until water is fully absorbed.
Add milk and stir.
Turn the temperature down to low and stir every once and a while to prevent the cooking rice from sticking to the bottom.
Cook rice on low until thickened.
When consistency is how you like it, stir in butter and salt (and other surprises like almonds or raisins or however you like it).
Enjoy topped with fruit soup, cinnamon and sugar, or cranberry sauce! Cool the leftover cooked rice and keep in refrigerator or freezer. Small portions of the leftovers, can be heated on the stove again by adding a little more liquid ane watching it carefully so it doesn't burn or simply in the microwave.
