Cardamom Cookies || Kardemummapikkuleivät

INGREDIENTS

100 g butter

.75 dl sugar

.25 dl (1.69 tablespoons) brown rice syrup

2+ tsp cardamom half course ground, half fine ground

2.5 dl AP wheat flour

.5 tsp baking soda

DIRECTIONS

  1. Whip the softened butter, sugar, and syrup to a fluffy texture.

  2. Add the dry ingredients to the butter, sugar and syrup mixture and mix well.

  3. Preheat the oven to 175˚C (350˚F).

  4. Form the dough into small balls (about the size of a garbanzo bean and put on baking sheet lined with parchment paper or a silicone baking mat.

  5. Press down on the dough balls with a fork.

  6. Bake in the middle of the oven for 7-10 min until golden brown.

  7. Enjoy! These are always a hit. (Don’t be surprised if you are asked if they are peanut butter cookies. The fork marks really throw people off!)
